Smoked whole chicken recipe?

I am heading to the store in a little bit to pick up some whole chickens and get the smoker going.

I have no idea how I want to cook them.

I will probably inject them and concoct a nice whiskey/bourbon spray.


Anybody have any ideas? I'm tired of the 'drunk' chicken and want to try something different. I love to experiment, but I have some people coming over and don't want to mess it up.

Here are a couple marinades I have used in the past, but the chickens were quartered when they were in the marinade. I won third place with the lemon chicken marinade in a BBQ contest one year.

Number 1

Patio Lemon Chicken

1/4 cup (50 mL) fresh lemon juice
3 cloves garlic, crushed
2 tbsp (25 mL) olive oil
1/4 tsp (1 mL) freshly ground pepper
1 tbsp (15 mL) oregano, crumbled
4 boneless skinless chicken breasts
Combine all ingredients except chicken in a heavy zip-lock plastic bag. Add chicken and squeeze bag to coatchicken with marinade; seal bag. Allow chicken to marinate 20 minutes, turning bag occasionally. Removechicken from marinade; discard marinade.

Number 2

2 Cup Soy Sauce
1 Cup Sesame Oil
1/2 Cup Sugar
2 tblspn. Cracked Black Pepper
1 medium onion finely chopped
1 clove minced garlic

you didn't reply quick enough!!! I already picked some stuff up and gonna do it the old way w/ tony's, garlic and onions inside the bird, and a concoction of lime juice, whiskey, and water to spray them throughout cooking.

These bad boys are gonna be good... got them smokin at 220 and have been on for a couple hrs...

If u get this (or anyone else)...... what kinda smoker do u have? Been thinkin of getting one myself... Also, wheres the best place to get wood chips?

Also anymore info would be appreciated.. how long does it take to fire those suckers up? average cooking time for different meats/poultry, etc.?

Any smoker should work.... just make sure it has a side fire box. I use whole hickory logs... a lot cheaper because all you have to do is get a little charcoal going, and then throw a couple logs on.

Mine is usually ready to go in about 30-45min. Cooking time varies on how you want it cooked. I am thinking about going to get some ribs right now... i'm bored and have nothing to do. I will probably cook them for 3.5 hrs....

make sure you have a water pan in the grill part so the meat won't dry out.

Cool.. thanks.. i thought about getting one of those little indoor ones that Emeril uses sometimes...... but i wanna be able to do a whole turkey/chicken, etc. so i wanna bigger one :)

yeah.... i would REALLLLLY suggest an electric one.

One of my buddies almost burned his house down using one.

If you are using a gas fryer... MAKE SURE it isn't aroudn anything that can catch on fire.

I don't use mine alot but you can't beat the deep fried turkey!! :00hour

I don't know where all of you are from... but you can't beat a good crawfish boil... or low country boil.


Some person stole my fryer out of my driveway a couple weeks ago... but for the Don Imus situation, I cannot commit on the race of this suspect.

hint hint.


I was gone for 15 minutes... and my neighbors said he was a pretty quick lil one.... only taking him 7-8 seconds to get it in his car and leave....


the way i see it.... if he needs it that bad, its worse than me... so hopefully he's fryin him a turkey right now... BUT, oil is SO expensive... so i doubt it.

I'm a little farther north than you and I don't use mine alot..

so how do you save the oil from day to day or a week at a time. You're right it is expensive.

if you have an extra fridge.... throw it in there.


other than that.... put the top on the pot and hopefully the oil will keep.

Best turkey i ever had was fried..... i would totally get drunk and tip it over, though.. :mj07:
