Chili Recipe Needed

Guys,

I'm not happy with my Southern Style Chili recipe anymore and I'm looking for a good starting point.

Now, if Terry Ray is reading this, I really hope you have the time to give me your secret recipe, same goes for FDC.

Everybody else is welcome to contribute.

1-2 pounds ground beef
1 large onion diced
3 ribs celery chopped diced
1 tablespoon season salt
1 tablespoon black pepper
1 tablespoon cumin
1 tablespoon chili powder
Brown the above ingredients drain the fat off
Put all that shit above in a large pot and add your chopped peppers. i use half a jar of diced jalapenos.
Add 3 more heaping tablespoons chili powder
1 more tablespoon cumin
1 tablespoon garlic powder or minced.
1 teaspoon red pepper powdered
1 tablespoon basil
1 large can crushed tomatoes
1 large can of tomato juice or spicy V-8
2 cans light kidney beans drained and rinsed
1 can tomato sauce
your preferred hot sauce to desired hotness.
simmer for a couple hours.

Turkey Chili - Healthy and delicious:

1 pound of ground turkey meat
1 banana pepper - - Pick out the seeds?
1 green pepper
1 can of pinto beans - - Drain
1 can of kidney beans - - Drain
1 can of black beans - - Drain
1 large can of diced tomatoes
1 small can tomato paste
1 small can of tomato sauce
1 small can of chicken broth
1-2 garlic cloves
A dash of seasoned salt
A dash of crushed black pepper
2 Tbsp. of chili seasoning
? can of beer (Coors light)

Simmer on low heat for four hours :toast:

Woodrow, you want a fast and simple recipe?

Add and adjust what ever you want as you go.

1 lb ground chuck....browned
1 pepper....chopped
1 sm onion chopped
1 envelope chili seasoning
1 lg jar salsa
1 can kidney beans (optional}
Simmer for 1/2 hour.

Easy recipe and you can add what ever you want.

I've posted this before but it is my all time favorite so I will again.

Teaxs Style Chili con Carne
2 to 4 Ancho chiles, 4-8 small dried red chiles or 2 to 4 tablespoons chili powder
4 tablespoons vegetable oil
3 pounds lean beef chuck, cut in bite-sized pieces
1 to 2 cups beef stock or water
1/3 cup finely chopped garlic
1 yellow onion, finely chopped
2 tablespoons ground cumin
1 tablespoon ground oregano
? cup Hungarian sweet paprika
1 or 2 Fresh cilantro sprigs
salt to taste


If using chiles, trim the stems and remove seeds. Place in a small saucepan and
add water to barely cover. Bring to a boil, remove from the heat, cover and let
stand for 15 minutes. Transfer the chiles and their soaking water to a blender
or a food processor fitted with metal blade. Pur?e until smooth. Set aside.

Brown half of the meat in a large skillet in the vegetable oil over high heat for
6 to 8 minutes. Transfer the meat and juices to a heavy pot and add the pur?ed
chiles or chili powder, if using. Place over low heat and bring to a simmer.
Meanwhile, brown the remaining beef in the same manner, then transfer it
and the juices to the pot. Add enough stock or water to just cover the meat.
Bring to a boil, reduce the heat to low and simmer, uncovered, for 30 minutes.

Add the garlic, onion, cumin, oregano, salt to taste, paprika and cilantro and
continue to simmer, uncovered, stirring occasionally, until the meat is very
tender, another 30 minutes. Add a little liquid if the mixture begins to stick
or looks too dry. When the chili is ready, using a large kitchen spoon, skim
any fat from the surface. Ladle into bowls and serve. Makes 4 to 6 servings

This stuff is fattening but have never seen one person not go back for a "small" second slice...

I found it somewhere online but it's freat with chili. I use jalapenos but you can go with serronos if you like it really hot!
Ingredients

  • 3 cups all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup sugar
  • 2 tablespoons baking powder
  • 2 teaspoons kosher salt
  • 2 cups milk
  • 3 extra-large eggs, lightly beaten
  • 1/2 pound (2 sticks) unsalted butter, melted, plus extra to grease the pan
  • 8 ounces aged extra-sharp Cheddar, grated, divided
  • 1/3 cup chopped scallions, white and green parts, plus extra for garnish, 3 scallions
  • 3 tablespoons seeded and minced fresh jalapeno peppers
Directions

Combine the flour, cornmeal, sugar, baking powder, and salt in a large bowl. In a separate bowl, combine the milk, eggs, and butter. With a wooden spoon, stir the wet ingredients into the dry until most of the lumps are dissolved. Don't overmix! Mix in 2 cups of the grated Cheddar, the scallions and jalapenos, and allow the mixture to sit at room temperature for 20 minutes.
Meanwhile, preheat the oven to 350 degrees F. Grease a 9 by 13 by 2-inch baking pan.
Pour the batter into the prepared pan, smooth the top, and sprinkle with the remaining grated Cheddar and extra chopped scallions. Bake for 30 to 35 minutes, or until a toothpick comes out clean. Cool and cut into large squares. Serve warm or at room temperature.

Which receipe are you going to use :shrug: Don't be a sell out take mine and run with it. If the cornbread is unhealthy balance it out with some turkey chili :)

No matter what next year make sure you are in town for the Chomp n' stomp chili cookoff in Cabbagetown. It is always the first Saturday in November. $5 per person and at least 50 differnt chilis to try, bluegrass music, and a great time.

Subsitute the ground beef or turkey in any of the above recipes with a liitle ground venison mixed with sage and ground pork:00hour

Alright, we went with Jack's chili for the chili cook off today. I made my special cornbread and topped it with a dice of serrano pepper for the guys that like it hot.

15 others in the contest, kegs, beer pong and corn hole.

Going to be a fun day.
