Jack that Po boy looks amazing. My favorite sandwich down there, especially at Parkway Bakery and Tavern in Mid-city area. Shrimp and Oyster loaded to the gill. I don't do meat Po' Boys but they are a great roast beef location as well. My choice is seafood like you showed. Enjoy your time!!
