Jumbo Shrimp an sausage Jambalaya fer me tanight !!!

Luvin' me some Cajun !!!

I find the u10 shrimp turn rubbery in jambalaya, so prefer a smaller shrimp for this application.

Agree with you that cajun jambalaya is superior to creole jamalaya. The creole variety is native to Nola, but the cajun variety, which has no tomato, is definitely more common.

Make sure to use andouille.....not the same without it, ..Also, I recommend the use of a 3rd protein.....chicken works well, but so do quail and pheasant.

Also, my current favorite jambalaya is a andouille and pork variety. Wally Taillon's recipe is great
