Nice thing about low carb is ......meat is a good thing.....bacon, poultry, beef, fish, pork, ham, zebra, giraffe.....you name it....
Here is a breakfast recipe I did today for first time, actually it is a combination of 3 on-line recipes.
Sausage crusted quiche....,it was soo good, my picky wife had seconds.....
16oz Sage pork sausage, cup whipping cream, 6 large eggs, half cup chopped red onion, handful cherry tomatoes, half cup shredded cheese, 2 cloves garlic, salt and pepper.
1.Sautee chopped onion and slivered garlic in olive oil, low medium heat, till onion and garlic become translucent. (almost clear)
2. press sausage into a glass pie pan, including ALL the way up the sides. (it will shrink slightly)
2. Cook sausage crust in pre-heated oven @375 for 5 minutes, or just until color just changes to grey.
3. While "Meat crust" is cooking, mix eggs, cream, finished onion-garlic mix, most of the cheese, couple big shakes pepper and salt...whisk it.
4.Take Cherry tomatoes, split them in half, scoop out and discard seeds and innards, salt and pepper, put aside.
5.Take "meat crust" out and pour off excess grease, pat dry with paper towel.
6. Evenly pour egg mixture into pie.
7. Place split tomatoes on top, cover top with a little shredded cheese.
8. Bake at 375 for 40-45 minutes, mine was done in 40 minutes. To check if done, put a knife in the center, if it comes out "clean" it is done. If it comes up with egg, cook longer.
9. ENJOY.....I had a side of Peach Salsa from Sprouts, my wife used basic Salsa.....
