I am looking at my sportsbook and most of the only bets they have are 3 ball??? What is that, and what are the 72 hole bets...is that basically saying that at the end of the tourney, one will beat the other???

The 3-ball bets are based on today's pairings in the Nissan Open. For example, Fred Couples will be playing with Justin Leonard and Michael Clark today. The 3-ball bet is which of these players will shoot the lowest score today.

The 72-hole matchup is which of the two players in the matchup will (i) complete the most holes (if player A makes the cut and the player B doesn't, player A wins), (i)shoot the lowest score (to determine which player finishes higher the leaderboard if they complete the same number of holes).

Just to confuse you even further, Hills are bumping up their juice with 72 hole threesomes!

Books offering 3balls will normally have Day1 etc written with the bet type to make sure (technically it's round 1 rather than day 1 because if it gets delayed etc, it carries over).

In case of tie in a 3ball bet, your return is divided by the number of players that tie (halved in the case of two players....)

Matchups can either be for 18 holes (one day) or 72 holes (standard event length other than last week). Always be aware of which one you are dealing with.
