No, there is no penalty for missing an evening, but there there still a score assigned for that day. Your score for a mulligan day is the average score of all of the days that you have played to date.
For instance, you played the first four days and scored a 96. You took a mulligan on day 5, So your score for that day was 96 divided by 4, which is 24. So your score after day 5 was 120.
