Generally I like to use one sweet potato per person.
For the sake of the recipe, I'll go with two servings, since most of you MJ Millionaires are probably DINKS anyways.
2 sweet potatoes
1 tbsp. garlic powder
1 tsp. crushed red pepper flakes
2 tsp olive oil
1/2 tsp. pepper
1/2 tsp. salt
Preheat oven to 400.
Peel, and cut up sweet potatoes into 1/2 inch cubes. Soak in cold water for 10 minutes. Drain. Pat dry with paper towel. (Although not as starchy as a traditional potato, it will still get rid of some of that flavor, and will help the seasoning stick). In medium bowl combine all ingredients, and stir well.
Bake for 40-50 mins, depending on how crisp you like them.
