Anyone have a good one? Tomatoes and peppers are ready in the garden - going to try making our own salsa this year.

easiest way is to ask Sportsaholic for couple jars.

his company looks like it makes some of the best out there.

Chop up a variety of good tomatoes, onion very finely, cilantro, with a decent amount of salt and squeeze a lime into it, add jalapenos if you like it spicey

HH - we are going to can it

This Zucchini Salsa is awesome - if you don't have zucchini, you would have to buy some, but it is probably cheap this time of year! When you eat it, you can't even tell there is zucchini in it, but it makes you feel a little healthier :) and it is really delicious.

Or, you can go a more traditional route like this Spicy Salsa. You can really adapt it for your own - leave out cilantro if you don't like it, add more of other stuff. The only important thing is to keep the vinegar-tomato ratio the same, cause that is what you need to keep it from spoiling after canning it.

Thank You HH - will give it a try. We didn't plant any zucchinni this year, had a TON last year. Ate a lot fresh, made loaves and loaves of zucchinni bread and I canned quite a few quarts of spicy zucchinni pickles.

I will keep that zucchinni salsa recipe in mind for next year though - sounds like another great way to use it up.

This is good stuff, you can substitute whatever peppers you want and qty for how hot you want it, be careful with habanero's they are hot little bastards.

Garden Salsa Recipe



Ingredients

4-8 Tomatoes
3-4 Jalapenos
1-2 Habanero for super hot salsa
2 Dried Red peppers, can used crushed red pepper
2 chili peppers
1-2 Green bell peppers for sweetness, can use red or yellow also.
Chopped Cilantro
Minced Garlic
Parsley Flakes
Italian Dressing, add enough to make it soupy.
Season Salt or allseason, you need to shake quite a bit in.
Salt & Pepper


Chop the Tomatoes, Peppers, & Cilantro and put in large bowl. Add Garlic, Parsley, Season Salt, Salt and Pepper, then add just enough Italian Dressing to make it soupy, mix well.
Eat with corn chips or whatever.

Easiest you can make in a flash

Trust me on this one everyone. For that last second, need to make salsa for people coming over. Stock your cabinet shelves with 2-3 cans of Del Monte Mexican Recipe Stewed Tomatoes (or two in the fridge already chilled) . Important that this is the brand you get.

Put 2 cans in a blender, add a nice handful of fresh cilantro, in other words, grab the top leaves and eliminate as much of the stem as possible. Don't be afraid of too much cilantro, unless you are not a fan.

Turn on blender with pulses, just keeping slightly chunky if that is how you prefer, or just mix it until smooth. Pour into a bowl, try and flash freeze it for 30 minutes if in a hurry, just to get it chilled. Better yet, if it can sit in fridge for an hour or two that will be best. Allows flavors to sit together awhile. Quick, easy, takes 2 minutes to make literally, just cooling time will vary.

Take out, serve with Tostitos scoops or chip of your choice, and you will be surprised how good.

If you have time and extra ingredients around, by all means add some scallions to the blender, vidalia onion, or whatever you wish. Let me know how easy it was.
