Steak Marinade Experts - Calling all cooks!

I go to this restaurant that serves all of their steaks marinated. I have asked if they would share the recipe and they will not. Even Looked for ex-employees that might spill their guts to no success.

The steaks are marinated and then grilled. They come out all black no matter what temperature you finish them at. If you want a medium rare steak- it comes out that way but the outside is black (not burned or charred just black). They are awesome!

I have searched the internet with no success either. Would anyone have an idea or a recipe for such a marinade?

All I can say is experiment as a good base beer or wine always work and then add your spices accordingly to your tastes. If the steaks are black then they are blackening them when cooking which is a dry rub applied to the surface then it?s cooked on a hot surface (I use cast iron) and it creates that blackened crust. As far as the dry rub you ain?t getting mine :) but do a Google on blackened redfish or dry rub and it should reveal what you need. GL

Agree 100% Hawkeye, sounds like they dry rub then blacken. A dry rub on a steak (or any meat IMHO) is fantastic!

I'm familiar with Blackening and am sure that this is not the case- the steaks don't come out with a crust like consistency so I would have to say no it's not that.

I have a gut feeling that Worchestershire and soy sauce must be included but once again just a guess. I can't think of what else might be used to turn a piece of meat black.

The place is a family owned and not a chain- One of a kind. It's called "Bill's Elbow Room" in Oviedo, Florida.

if it seems somewhat salty, it is probably Dale's which you may or may not be familiar with

Try this i use it for a change of pace.

Equal parts of worchestershire sauce, soy sauce,

and jalapeno juice, its the liquid in a jar of jalapenos, mostly venegar.

it will not make it hot at all, very good
add some minced garlic to taste and coarce ground pepper, no salt the soy sauce has plenty.
mix just enough to cover the steaks.

a lot of restaurants base there steaks in butter to give them a charred look. For me its worchestershire,lemon juice, crushed garlic,pepper and a liittle soy sauce.

Note where I'm from.........

A surprisingly incredible marinade is 2 hours of Lawry's Terryaki marinade on a Prime Cut Ribeye. Must be cooked on the grill. Seems too simple, but it is killer.

Marinate your steak with whatever you wish for 1-3 hours.

Before you put it on the grill dip it in a bowl of oil.

Cook it as usuall, the outside will be black.

Sorry, but that's how they do it.

What you are referring to is "Pittsburgh style" of cooking a steak. I'm sure you can google that term to find it out.

Also, a true creole style of blackening causes a slight crusting going on due to the extremely hot temperatures used. Many restaurants try to pass of "blackening" food as throwing a dusting of cajun spices on it which has seemed to take over as the common definition.

After doing a little search on "Pittsburg style" steak I believe that this is exactly what I've been looking for. Thanks guys!!

Now I just have to get the routine down when cooking on my gas grill (not sure if I can get the grill hot enough for this style).

I know that Charcoal just about always makes grilling taste better but I hate to not use this beautiful grill that I have.

We cut all of our own meat on the premises and steaks are cooked to order on a double broiler.

If you do nothing,put some extra-virgin olive oil on that bad boy; and let sit for a few hours. Poor your favorite beer on her when she's hot on the coals. I'll bet they blacken with some kind of oil and butter.
