That really looks like some large pockets of fat if that is truly Wagyu. I picture it being more marbled and lighter pink color, but what do I know? I have not eaten a wagyu ribeye.

There is Wagyu farm just south of here and have a tent every weekend at the Madison Farmers Market. I have had a couple of the ribeyes and they are 18oz for $35.

The burgers are also excellent and go for $8lb with 3 pounds or more.

He also sells packages of several mixed products and great prices.

On Thursday, June 6th we will be at the Greene Street Market in downtown Huntsville (at the corner of Greene St and Eustis Ave from 4pm until 8pm), and then on Saturday, June 8th, will be at the Madison City Farmers Market (at Trinity Baptist Church on Hughes road from 8am until Noon)!

We are still short of filet mignon but otherwise should have at least two of every cut on our menu. Do consider pre-ordering since we never know what will be popular in a given week. It makes us sad when our regulars come to our booth late in the day and we are out of your favorite cut.

Whole Loins Available

Don?t forget that we are now making some of our wholesale cuts available by special request to our retail customers. If you are feeding a crowd, you like to cut steaks to your own desired thickness, or you just want a deal on a whole loin, let me know and we can review what I have available this week. Generally speaking we have:

whole Filet Tenderloin (2.5-3.5 lbs),
whole NY Strip loins (8.75-12.5 lbs),
whole boneless Ribeye Loins (9-10lbs),

These are generally packaged for wholesale so the price is a discount over our stated retail prices (though you still have to pay sales tax) ? reply with interest and I?ll go over the details of what we have and what they will cost. Note: the ONLY way to get these is to pre-order.

We now have ALL BEEF Sausages. Retail prices: LINKS are $12/lb and ground sausages in 1lb packages (like our ground beef) are $10. (Note: it costs me $2/lb to have it put in links, which is why it costs more). PRE-ORDER Special - $1 off each package of sausage (link or ground). The A5 will not have those big globs of fat on it. I only know this because someone sent me $150 wagyu ribeye and I looked into all of this. To be honest it was fun to try but it?s really rich. You only need a few bites and the best way to do it is to cut it up like sashimi and sear it piece by piece. It?s a one time thing though. I?d much prefer a ?normal? steak compared to the A5.

Picked these up at Costco....20 bucks a lb....I only eat meat (Carnivore Life) and wanted a treat...it was NOT worth it....
