What are the money lines usually like for the 1 and two seeds?

Usually non-existent due to the fact they are normally 20+ point favorites. Couple of books might carry them....why?

Yup, they're pretty obscene if available. Take Duke, for example, last year 35 pt fav over Monmouth (won by 42), the year before 33pt fav over Lamar (won by 27).
