Potato, cheese, and caramelized onion pierogis with a berbere cream sauce!

What Does Berbere Taste Like? The flavor of berbere is hot, peppery and tangy. Traditional berbere is best made from whole spices that are toasted and ground, which produces maximum flavor.

I make them all the time (I buy the frozen ones). I'll try to make that sauce next time. Berebere is something I use for a spice rub on chicken and pork, but I'll bet it's good in this sauce.

I started doing baby back ribs with Berbere spice rub I ordered online and glazed with a very basic home mixed bbq sauce (ketchup brown sugar spices simmered until thick). Rub both sides, add white Asian vinegar, wrap in foil. About 3.5 hours at 300, then unwrap and broil on each side twice for a few minutes ( ultra care when flipping because wants to fall apart) brushing on bbq sauce before each flip. Delicious. Definitely plan to expand use of berbere.

And, FYI I originally Tried to blend berbere spice mix on my own, but it was insanely hot. Almost unusable hot. I didn?t remove any seeds from the Thai chilies I used. Overpowering heat.
