Haggis is a savoury pudding containing sheep's pluck, minced with onion, oatmeal, suet, spices, and salt, mixed with stock, and cooked while traditionally encased in the animal's stomach though now an artificial casing is often used instead. According to the 2001 English edition of the Larousse Gastronomique:

Back around 35 years ago we had a weekly poker game out in the sticks at a trapper's house. One night he served chili. I was skeptical because the meat in it looked different but I tried it anyway. Everybody loved it. He told us what we ate afterwards. Beaver. :scared
I ate it at my grandfather's 90th birthday. I didn't eat the casing (sheep stomach) but the interior was glorious.
This is where the sense of smell comes in very handy. If it didn't smell bad I guess I would try it.
