I've never been a fan of northern style fried fish. I prefer the Louisiana method. This is my version of it.

Mix corn meal, flour, salt. garlic powder and cayenne

Pat dry speckled trout filets and toss is flour mix (forget the egg wash)

Tap off excess and fry.

Serve hot with a squeeze of lemon:toast:
