Yeah man, I do it twice, to be honest.
After about 2 hours or so, I punch the air out of it and then I let it proof again for at least another hour to really ensure the quality and working with the Tipo 00 flour man, Come on now. Don't call yourself a guinea if you ain't using 00 flour... disgraceful LoL
