What temperature and for how long you cooking them?
I've got a cheap sidebox smoker that I run apple wood through.
I've never done chuckroasts before but my father in law and I split a side of beef. We've never had success with the chuckroast in the past. So I figured we'd try smoking some.
I smoked them at 225 until they reached 160*. Then I foiled them until they hit 210*. At that point I pulled them and put them in a cooler of towels. (never done that either). They'll rest there until about 7pm. I put the meat on at 11am today. Slow and low...
