How long do you smoke them? did italian sausage last week for about 3 hours. Might have been a tad bit long but they were good.

I'm 'winging' it. I try something different every time. I'm trying 300 degrees for about 45 minutes each side. Smoking the shit outta them with apple. I don't have time for a longer cook today. I just piled them up on the green egg and see what happens. After this 45 minutes (I already flipped them) I don't expect them to be done yet but I want that. I'm gonna deep fry them at 375 until done so that they are extra crispy. I'll let you know.
