Some recent Cuban food recipes/preparations by me

Got back from Cuba and got two recipes from the Chef of our favorite restaurant, he was kind enough to share. Sunday made this ceviche and gazpacho together, was amazing. Used white tuna sushi from Buford Farmers Market here in Atlanta, and all fresh veggies and herbs from there also.

Sorry images so big, need help with that. Chefs own writing for Gazpacho. Translated from above:
1 lb. red tomatoes
3-4 oz cucumbers deseeded
3-4 oz white or yellow onion
8 oz bell peppers, preferably red or yellow
2 cloves garlic
Olive oil 2-3 Tbs
salt and pepper to taste

All in the blender and enjoy

It's fantastic to see your love for Cuban food. I'm also a fan of those tasty dishes. Recently, I visited a Restaurant Perth that served Cuban cuisine and I must say, their Mojo sauce has given my home recipes a run for their money! Maybe adapting your recipe with their citrusy touch might enhance the dish just as well. Give it a try, perhaps? These tweaks are what make cooking exciting after all!
