I am baking a cheeseless mexican pizza as we speak. Black beans, corn, tomatoes, cilantro, red onion and lime juice mixed together (similar to a black bean salsa). Spread on a corn tortilla and baked until crisp.

My wife puts it together. If there are measurements, I'll post 'em. She adds cheese to her "pizza", but I try to avoid dairy.
