One more hour for the ribs, spray them with some root beer then foil and back on the cooker for 2 hours.

Root beer...I'll have to try. I'm using apple juice.

I use apple too but trying root beer the next time.

I haven't made ribs this year. Damn!

Spares or baby backs?

I'm doing spares using the 3-2-1 today. I St. Louis style trim them and then smoke the trimmings for beans that I make once in a while.

Baby back!

Doing 3-2-1 too. How do you do the last hour? I was going to use inderect heat and sauce the last 15 mins.

Open to suggestions though.

I do indirect but if they are REAL fall off the bone I put them a little closer to the firebox to make sure they firm up.

For me I just spray them a little with more soda or apple juice. For the wife and kids I but a little brown sugar on them with the juice from the foil poured over.

I let people put their own sauce on after because some (me) like a dry rib.

Did you ever try a finishing vinegar based sause instead of BBQ?

Funny I was just thinking about that.

I few years ago I did 4 racks on a kettle grill. All I used was salt and pepper and mopped them with vinegar cut with water. No smoke.

They were some of the best ribs I ever tasted.
