Raw but if you feel more comfortable putting the chicken in an hour or 2 before serving you'll be fine. The contents will be plenty hot to cook it and it can't really over-cook.
I add so little chicken you don't really even have to have it in there. The smaller chunks will cook quick though so don't worry about the chicken being undercooked. Be sure cooker is on high when you add the chicken and shrimp!

Hooters wings breaded. .. hot. 911 ....Chipotle garlic .. and mild for the little ones.

And yes I know hooters meat comes from/off the recall list... but their wings are fugin delicious.

Plenty of blue moons and Victoria...

And the wife makes the best German chocolate cake... and some flan for the little one.. for the last 3 days all she wants to eat is flan...:facepalm:

Italian Drip Beef

Throw all this into the crock pot, i'll add onions

Ingredients

1 whole Beef Chuck Roast, 2.5 To 4 Pounds
1 can Beef Consomme Or Beef Broth
3 Tablespoons (heaping) Italian Seasoning
1 teaspoon Salt
1/4 cup Water
1/2 jar (16 Oz) Pepperoncini Peppers, With Juice
Buttered, Toasted Deli Rolls

Preparation Instructions

Combine all ingredients in a heavy pot or dutch oven. Stir lightly to combine seasoning with the liquid.

Cover and bake in a 275 degree oven* for 5 to 6 hours, or until meat is fork-tender and falling apart. **If meat is not yet tender, return to oven for 30 minute intervals till it's tender!**

Remove from oven. With two forks, completely shred all meat, leaving no large chunks behind. Serve immediately, or keep warm over a simmer on the stove.

May make the day before, then store in the refrigerator. Remove the hardened fat from the top before reheating.

Serve on buttered, toasted rolls. Top with cheese and melt under the broiler if desired. Serve with juices from the pot.

Sorry brother. Here you go...

You'll need 4-14.5 cans of Hunts Fire Roasted Tomatoes. Don't drain.
1 large chopped onion
1 large yellow bell pepper
1 1/2 cups chopped celery
2 cups chicken broth(maybe a little more)
2 teaspoons dried thyme
2-3 tablespoons chopped garlic
1 1/4 tablespoon salt(or less)
1 1/2 tbsp ground black pepper
1 lb of Andouille sausage
1 lb of chicken chunks, 1 inch chunks(or use less...I don't use much)
1 1/2 lbs med shrimp peeled and deveined(I take tails off...your call)
2 teaspoons Cajun seasoning if you have it
1 bay leaf
1/2 cup chopped parsley

Combine all ingredients except chicken, shrimp and parsley in 5-6 quart slow cooker. Cook 7 hours on low (or a little longer...it won't hurt) or 3-4 hours on high(which I never do).

After that time, uncover and add shrimp and chicken on turn to high if on low. Cook for another 30-45 mins or so. After that, stir in parsley.

Ladle over cooked rice. Don't add rice to the slow cooker! Jesus, I did one time and that rice sucked up all the damn juice!

That should do it. Setting mine around 9 AM or so Sunday morning.

First year since being in Wichita I'm not having the party. I've had three inquiries this morning on what time to come by. Next year will just have to be twice the party. Having enchiladas, chips, and salsa with a coke and a smile. Little guy sitting with me. Best Superbowl get together ever.
