1500 calories is plenty.
example of a days food
300 calories 9am - fruit smoothie with strawberries, grapes, blueberries, whatever.
300 calories at noon - campbells chicken noodle soup 175 calories and a salad using no fat low cal italian dressing 125 calories. (really closer to 80 but rounding off to 300 for the meal.) It's a huge salad too.
600 calories at 4pm - chicken breast around 300 cals another salad for 100 cals and a couple veggies.
100 calories at 6om with some yogurt.
200 calories around 8pm with fruit usually pineapple.
that's plenty of food.
plenty of things to mix and match to fit in 1500 calories a day.
